My friend (and amazing artist) Renzo is part of the inspiration behind Berto - a Peruvian who moved to West Virginia in his teens - and has given me guidance for all things Peruvian while writing Elephant Town. When I asked him what a bunch of Peruvians would be eating at a cookout, he recommended:
I ordered some cow heart from my local butcher and made the anticuchos last year, and they were so good that now I have two whole cow hearts in my freezer, waiting to be anticuchoed.

*by "helping me" I mean that I'd send Kier my best guesses from my four years of Spanish class in school, and be EXTREMELY EXCITED if any of it was correct... and then Kier would fix the rest for me.
